The DELIFUNGUS project for vegan desserts that are rich in protein arose as a strategic collaboration between EROSKI, AUSOLAN, and INNOMY, combining experience in food, sustainability, and technological innovation to meet the new demands of the market. This joint effort seeks to develop a range of plant-based products that are healthy, sustainable, and adapted to current market trends.

We’re joining forces for innovation

  • EROSKI, as a leading distributor in food, contributes its knowledge of the end user and market trends, orienting the development towards products that satisfy consumer expectations regarding flavor, quality, and sustainability.
  • AUSOLAN, with its experience in food services and industrial production, provides scalability of the newly-developed processes, ensuring that the prototypes can be turned into viable products that can be sold on the market.
  • INNOMY, a specialist in food innovation and mycelium technology, is in charge of incorporating alternative proteins and of the creation of innovative formulations that optimize the nutritional and functional profile of the products.

The main goal is to create protein-rich vegan desserts that are delicious, balanced, and affordable. These products are designed for consumers who are interested in healthier and more sustainable options, offering high nutritional value with ingredients that are carefully selected and the production processes that respect the environment.
